My low-carb meatball and parmesan casserole was a hit with my family and should be a hit with you too. This easy family dinner is also low carb, gluten-free, grain-free, and has a THM S recipe.
Ingredients
Meatball ingredients:
- 1 pound ground turkey
- 1 pound Italian sausage
- 1 cup grated mozzarella cheese
- grated parmesan or 1/3 cup grated parmesan
- 1 julienne zucchini about 1 cup
- 1 egg
- 2 teaspoons chopped dry onion
- 2 teaspoons minced dried garlic
- 2 teaspoons dried basil
- 1 teaspoon salt
Casserole ingredients:
- 1 cup marinara sauce
- 8 ounces shredded cheese (using a two-cheese pizza mix of mozzarella and provolone)

Instructions
- Preheat the oven to 400. Spray the casserole dish with cooking spray
- Combine all meatball ingredients and mix well. Form into about 24 meatballs and place in a casserole dish.
- Bake for 30 minutes or until meatballs is done. Gently drain the cooking liquid from the casserole dish.
- Top with sauce and cheese. Bake an additional 10 to 15 minutes or until cheese is melted.
- Optional: Grilled for a final 3-4 minutes to toast the cheese. Be careful when placing it under the grill. Cheese burns easily.
