Keto Meatball Casserole

When you need a family dinner, this meatball casserole is perfect. Flavorful low-carb meatballs served with sauce and cheese and the best meatball parmesan ever.

My low-carb meatball and parmesan casserole was a hit with my family and should be a hit with you too. This easy family dinner is also low carb, gluten-free, grain-free, and has a THM S recipe.

Ingredients
Meatball ingredients:

  • 1 pound ground turkey
  • 1 pound Italian sausage
  • 1 cup grated mozzarella cheese
  • grated parmesan or 1/3 cup grated parmesan
  • 1 julienne zucchini about 1 cup
  • 1 egg
  • 2 teaspoons chopped dry onion
  • 2 teaspoons minced dried garlic
  • 2 teaspoons dried basil
  • 1 teaspoon salt

Casserole ingredients:

  • 1 cup marinara sauce
  • 8 ounces shredded cheese (using a two-cheese pizza mix of mozzarella and provolone)

Instructions

  1. Preheat the oven to 400. Spray the casserole dish with cooking spray
  2. Combine all meatball ingredients and mix well. Form into about 24 meatballs and place in a casserole dish.
  3. Bake for 30 minutes or until meatballs is done. Gently drain the cooking liquid from the casserole dish.
  4. Top with sauce and cheese. Bake an additional 10 to 15 minutes or until cheese is melted.
  5. Optional: Grilled for a final 3-4 minutes to toast the cheese. Be careful when placing it under the grill. Cheese burns easily.
